Welcome Spring!!

Spring is here, spring is here!! I can smell it in the air and i looove it. It's almost the end of March, I cannot believe how quickly we've delved into 2011. Weren't we just celebrating new years?? I'm excited for our new ventures this year! Christian starts pre-school in august which is bitter sweet for me, he's grown up so so fast. we are looking into a soccer program for him as well, can't wait for that! Hopefully we can also move out of our little apartment and into a home that will be a better fit for us and our high energy dog! and son!!

Happy Friday to you! I've been very neglectful of this blog....boo, sorry! I feel like I've got a million things pulling me in different directions, It's crazy. Anyway, Here's 10 random facts about me:

1. I was born in Nicaragua and came to California at the ripe age of 8 months.

2. I love the 1940's, I obsess the music and fashion and look of the woman of that time.

We did some egg dyeing today, it was an interesting experience with an almost 3 year old. He dunked his hands in the dye, cracked eggs, peeled eggs and I wanted to say, "Hey! that's not the way to do it!" but you know what, he's got to do it his way for it to be fun so we let him. I gotta pick and choose my battles!!

Falafel Burger (from parents mag)

what you'll need:

1 16oz can of garbanzo beans
1/4 C of shredded carrots
3 tbs. of sesame tahini, divided
1/2 tsp. of ground cumin
1/3 C plain lowfat yogurt
2tbs. of lemon juice
1 tomato
8 mini whole wheat pita pockets

Pantry staples you'll need:
2 tbs. of all purpose flour
11/2 tsp. chopped garlic
1/4tsp. salt
1/8 tsp. pepper
1tbs. olive oil spray

Step 1:

Preheat oven to 425°F. Rinse and drain garbanzos, and mash together with carrots, flour, 2tbs. tahini, 1 tbs. water, garlic, cumin, salt and pepper. (it's ok if there are pieces of garbanzos)

Step 2:

Grease cookie sheet with olive oil and shape mixture into 16 patties the size of a half dollar. place on cookie sheet. Brush with olive oil. Bake for 10 minutes or until crispy turning once.

Step 3:

Meanwhile in a small bowl mix yogurt, remaining tahini, and lemon juice. Add warm water by the tablespoon if sauce is stiff.

Step 4: Stuff falafel, tomato, lettuce (if you choose) into pitas. Serve with yogurt sauce on side and fresh veggies like spears of cucumbers and red peppers.

Enjoy!! we sure did!!

His first Casey's Cupcake

I took Christian to our downtown yesterday for a special treat. He was so excited and showered me with kisses, he's so cute! He got his first taste of Casey's Cupcakes, see pictures...they tell it all :)

We enjoy going on local family outings, one place we have enjoyed very much is Forest Falls. Last time we went was about 7 months ago, now that the weather is warming up again I'd love to go again. We ate lunch out there and enjoyed the scenery. Christian and Molly loooved the water!!

For the past month or so I have had an urge to bake cupcakes and I have which has been great, christian loves them of course BUT I cannot control myself. I am embarrased to say how many I've had from each batch!! I want to exercise but can't find the oomph to do so...oh well. I did find the cutest cupcake bakery called caseys cupcakes and cappuccino's in downtown riverside!!

Botanical Gardens

We go to the botanical gardens from time to time, actually it's one of our favorite places to go. It's beautiful with lush green trees and all kinds of different types of flowers and herbs. It feels like a get away to us, it's easy to get lost in this massive garden, Christian, our 2 year old loves it. We all have a love for nature, we get a sense of freedom and peace when we go there.
