Welcome Spring!!



Spring is here, spring is here!! I can smell it in the air and i looove it. It's almost the end of March, I cannot believe how quickly we've delved into 2011. Weren't we just celebrating new years?? I'm excited for our new ventures this year! Christian starts pre-school in august which is bitter sweet for me, he's grown up so so fast. we are looking into a soccer program for him as well, can't wait for that! Hopefully we can also move out of our little apartment and into a home that will be a better fit for us and our high energy dog! and son!!

Happy Friday to you! I've been very neglectful of this blog....boo, sorry! I feel like I've got a million things pulling me in different directions, It's crazy. Anyway, Here's 10 random facts about me:

1. I was born in Nicaragua and came to California at the ripe age of 8 months.

Happy Easter!!




We did some egg dyeing today, it was an interesting experience with an almost 3 year old. He dunked his hands in the dye, cracked eggs, peeled eggs and I wanted to say, "Hey! that's not the way to do it!" but you know what, he's got to do it his way for it to be fun so we let him. I gotta pick and choose my battles!!

Don't know what to make for dinner?? Make this!

Falafel Burger (from parents mag)

what you'll need:

1 16oz can of garbanzo beans
1/4 C of shredded carrots
3 tbs. of sesame tahini, divided
1/2 tsp. of ground cumin
1/3 C plain lowfat yogurt
2tbs. of lemon juice
1 tomato
8 mini whole wheat pita pockets

Pantry staples you'll need:
2 tbs. of all purpose flour
11/2 tsp. chopped garlic
1/4tsp. salt
1/8 tsp. pepper
1tbs. olive oil spray

Step 1:

Preheat oven to 425°F. Rinse and drain garbanzos, and mash together with carrots, flour, 2tbs. tahini, 1 tbs. water, garlic, cumin, salt and pepper. (it's ok if there are pieces of garbanzos)

Step 2:

Grease cookie sheet with olive oil and shape mixture into 16 patties the size of a half dollar. place on cookie sheet. Brush with olive oil. Bake for 10 minutes or until crispy turning once.

Step 3:

Meanwhile in a small bowl mix yogurt, remaining tahini, and lemon juice. Add warm water by the tablespoon if sauce is stiff.

Step 4: Stuff falafel, tomato, lettuce (if you choose) into pitas. Serve with yogurt sauce on side and fresh veggies like spears of cucumbers and red peppers.
