Don't know what to make for dinner?? Make this!

Falafel Burger (from parents mag)

what you'll need:

1 16oz can of garbanzo beans
1/4 C of shredded carrots
3 tbs. of sesame tahini, divided
1/2 tsp. of ground cumin
1/3 C plain lowfat yogurt
2tbs. of lemon juice
1 tomato
8 mini whole wheat pita pockets

Pantry staples you'll need:
2 tbs. of all purpose flour
11/2 tsp. chopped garlic
1/4tsp. salt
1/8 tsp. pepper
1tbs. olive oil spray

Step 1:

Preheat oven to 425°F. Rinse and drain garbanzos, and mash together with carrots, flour, 2tbs. tahini, 1 tbs. water, garlic, cumin, salt and pepper. (it's ok if there are pieces of garbanzos)

Step 2:

Grease cookie sheet with olive oil and shape mixture into 16 patties the size of a half dollar. place on cookie sheet. Brush with olive oil. Bake for 10 minutes or until crispy turning once.

Step 3:

Meanwhile in a small bowl mix yogurt, remaining tahini, and lemon juice. Add warm water by the tablespoon if sauce is stiff.

Step 4: Stuff falafel, tomato, lettuce (if you choose) into pitas. Serve with yogurt sauce on side and fresh veggies like spears of cucumbers and red peppers.
